Winemaking/Vinification: Grapes are hand harvested in the cool morning to retain their natural freshness. A mix of whole-bunch and destemmed fruit is gently crushed and fermented with natural yeasts in unlined concrete tanks.

Ageing: 6 months in heavily used barrels.

Aroma: A lot of aromatic complexity, fresh red fruits and ending with a nice acidity.

Tasting Notes: On the palate, nice attack, very full while keeping a nice freshness.

Food pairing: It's perfect with stewed beef dishes, a plate of cold cuts and a plate of pasta with stew or sausage.
