Winery: Casa Santos Lima
Grapes: Chardonnay, Encruzado and Viosinho
Winemaking/Vinification: Viosinho and Chardonnay grapes were fermented for 25 days in new French oak barriques. This wine remained in contact with the lees for eight months, undergoing “battonage” process. Encruzado grapes were fermented in stainless steel vats for 20 days and remained in contact with the fine lees for eight months.
Aroma: Lime blossom, exotic fruits and candied citrus fruits.
Tasting Notes: Citrine colour. With an intense colour, this wine shows an excellent balance between aromatic complexity, with citrus, tropical and some vanilla notes, and balanced texture, acidity and minerality, characteristics of the region. A very elegant wine, with rich and fresh aromas and an intense and long aftertaste.
Food pairing: Risotto, asparagus à la flamande and salt-crusted fish.
