Winemaking/Vinification: Mechanical harvesting during the night. Total disengagement. Pre-fermentative cold maceration for 48 hours. Fermentation with controlled temperature (22ºC -28ºC) in vats of stainless steel. Post-fermentative maceration for 5 to 10 days. Malolactic fermentation in stainless steel vat with French oak staves.
Ageing: 12 months in French oak
Aroma: Complex red fruit aroma with earthy and balsamic notes.
Tasting Notes: Intense ruby. Remarkable freshness, excellent structure and balance. Complex finish showing great elegance.
Food pairing: Game dishes, red meat, Iberian pork and stews
