Winemaking/Vinification: Manual harvest. Total destemming. Pre-fermentative maceration for 8 to 12 hours. Vacuum press, fermentation at controlled temperatures (15ºC to 18ºC) in stainless steel vats for 10 to 15 days.
Ageing: In cube “sur lies”.
Colour: Citrus yellow.
Aroma: Tropical fruit, grass and asparagus.
Tasting Notes: Fresh attack, fine acidity. Mineral and harmonious. Long finish.
