Winemaking/Vinification: Mechanical harvesting during the night. Total disengagement. Pre-fermentative cold maceration for 48 hours. Fermentation with controlled temperature (22ºC -28ºC) in stainless steel vats. Post-fermentative maceration for 5 to 10 days. Malolactic fermentation in stainless steel vats with French oak staves.
Ageing: 9 months in french oak barrels
Aroma: Complex aroma of woodland fruits, white flowers and well-integrated truffles with chocolate notes and toast.
Tasting Notes: Intense ruby with violet reflections. Round, rich and voluminous. Balanced acidity and fine tannins. Long and complex finish.
Food pairing: Mediterranean food in general, pasta, lamb, game dishes and soft cheeses
