Grapes: Encruzado, Malvasia Fina, Cercial, Bical and Verdelho
Food pairing: Ripened cheese, spaghetti carbonara, spicy Asian cuisine
Winemaking/Vinification: Manual harvest for small boxes. Manual selection of bunches on the table of choice. Total unloading followed by gentle crushing. Pressing. Cold static decantation for 24 hours. Co-fermentation of the whole lot with natural yeasts in cement vats with temperature control between 15ºC and 20ºC.
Ageing: Stage on thin lees with periodical “batonnage” until mid-April.

Tasting Notes: Round and fat, quite complex, nice minerality and length.
Aroma: Exotic and citrus fruits with hints of white flowers
