Winemaking/Vinification: Previously destemmed the grapes went through a low temperature pre-fermentative maceration for 24 hours. The alcoholic fermentation is done in stainless steel vats with temperature control between 26º - 28ºC, for 14 days. Skin contact maceration and cap (submerged) for 28 days.
Ageing: Four to six months ageing in oak barrels.
Aroma: Violet, sweet coffee and subtle cocoa.
Tasting Notes: A deep coloured and an intense flavoured wine. The flowery, chocolate and berry jams notes combine perfectly with the oak ageing which the wine has been submitted. This is a wine that will get more interesting as time goes by, but yet, its structure and rounded tannins make it ready to be had now.
Food pairing: Fine and delicate meats, firm-fleshed fish such as grilled tuna or swordfish.
